Muffins
Combine dry:
3 ½ Cups GF
flour
½ tsp
xanthan gum
2 ½ cups
sugar
2 tsp
cinnamon
2 tsp
nutmeg
1 ½ tsp
salt
2 tsp
baking soda
Combine
wet:
¾ cup white beans pureed
¼ cup veggie oil
2/3 cup
water
1 can
pumpkin puree 15 oz.
6 Tbsp
applesauce
Mix
separately and then together. Add
dairy free chocolate chips. Bake in muffin tins at 350 °F for 35-40
minutes.
